Buns with sweet cheese and raisins

For the dough:

Put the flour in a bowl with a little salt and mix it with a whisk (or you can pass it through a sieve to aerate it).

Mix the yeast with 2 tablespoons of sugar and when it has melted, pour it over the flour.

We put the sugar and vanilla in the warm milk to melt faster.

In the bowl of flour we put the egg and the sweet milk and we start to knead until we form a slightly sticky dough. At the end, add the oil little by little and knead until you incorporate it into the dough. Let it rise until it doubles in volume.

For the filling:

Mix the cheese with the salt powder, eggs, sugar, vanilla and raisins until all the ingredients are well blended.

After the dough has risen, divide it into 2 and spread each piece for approx. 2 mm (we help ourselves with a little flour) and with a knife we ​​cut the dough into squares of large size and we fill each square with 1 tablespoon of the cheese filling, then we gather the ends to form a bun. We place them in the tray, lined with baking paper and let them rise for another 20 minutes, then we grease them and sprinkle a little sesame on top.

Put the tray in the oven until they are nicely browned.

Very tender and aromatic, the pie with sweet cheese and raisins is among my favorite desserts. I would eat every day, without the risk of ever getting bored!
My mother didn't make us sweet cheese pie and she still doesn't, I don't know why. Dad makes a sweet cheese pudding from time to time, but it's not the same. This pie is a perfect combination of tender top and cheese filling, sweet, vanilla, and raisins.
My aunt was making a super tasty sweet cheese pie. When I went to visit her, she always had something good ready. If it wasn't the sweet cheese pie, it was the apple, cake, blackberry or walnut pie. But the sweet cheese pie was my favorite and we didn't leave until we finished the last piece :)

Now I make my own sweet cheese pie and my recipe is at least as good as my aunt's.
Sweet cheese and raisin pie is easy to prepare. The dough is prepared from flour, sugar, butter, a little yogurt, egg and vanilla. In order to obtain a super fragile top, it is necessary to add baking powder. If you want, you can add grated lemon or orange peel. The dough is quite soft, malleable, and it is very easy to work with. After cooking, the sheets can be spread immediately, you won't have any problems, but it will be better if you keep the dough in the fridge for at least 30 minutes.

As for the filling, things are even simpler: simply mix all the ingredients.
The ingredients below are for a 25 / 35cm tray. But I used a smaller tray, for dietary reasons :)

Dough ingredients:

  • 500 gr of wheat flour

  • 500 gr cow's cheese
  • 40 gr butter, 1 egg yolk
  • 80 g powdered sugar, 1 tablespoon vanilla sugar

Method of preparation:

Mix the yeast with a teaspoon of sugar, a tablespoon of flour and 250 ml of warm milk. Cover the yeast with a towel and set aside for 15 minutes in a warm place.

Sift the flour into a bowl. Add half of the flour to the yeast. Add salt, honey, egg and melted butter. Mix everything with a spoon until the ingredients are combined. Then add the rest of the flour and mix well.

Transfer the dough to the worktop and knead it well for about 15 minutes until it no longer sticks to your hands. Sprinkle a bowl with flour, put the dough in it and cover it with a cloth. Leave the dough to rise for 1 hour.

As the dough grows, prepare the cheese filling. We put the cottage cheese through a mincer twice. Then, with a mixer, mix and gradually add the powdered sugar, egg yolk, vanilla sugar and butter.

Mix everything very well until you get a homogeneous composition.

After an hour, put the dough back on the worktop and knead it a little to remove air bubbles. Divide the dough into pieces to form buns. The weight of each piece of dough should be 60 grams.

Form small balls and put them in a tray lined with baking paper. Lightly flatten them, then cover them with a cloth and leave them to rise for about 30 minutes.

After the buns have risen, take a glass, grease the bottom with oil and press it hard on each bun. Then fill the holes in the buns with the previously prepared cheese filling.

Grease the buns with beaten egg. Bake the cheese buns for about 20 minutes in the preheated oven at 180 degrees or until golden brown. Good appetite and increase cooking!

8. Cut the buns to the desired size with a simple thread. Pass the cut end through the flour and place it on a baking tray lined with baking paper. Arrange the buns at a distance from each other, because in the process of baking the buns will grow.

9. Cover the buns with a kitchen towel and leave to rise for 30 minutes. Grease the buns with a beaten egg with a little milk.

10. Bake in the preheated oven at 180 ° C for 25 minutes.

11. After the buns have cooled, powder them with a little powdered sugar.

The buns come out soft, puffy and the cheese aroma spreads throughout the house!

Method of preparation

British scones recipe

Ingredients (for 14-16 pieces):

  • 250-300g flour with growth agent (if you don't have one, add 5g baking powder to 100g flour)
  • 1 tablespoon sugar
  • 1 & frac12 teaspoons baking soda
  • & frac12 teaspoon salt
  • 60g cold butter, cut into cubes
  • 160ml milk (you can also put whipped milk or fatty drinking yogurt)
  • 1 or
  • Optional: 2 tablespoons raisins
  • milk or 1 beaten egg

Sift in a bowl the flour, baking soda, salt and add the sugar. Put the cold butter and knead by hand until the dough acquires a granular appearance.

-200 g of sugar (100 g for dough and 100 g for filling)

-600-700 g of sifted flour

-25 g of fresh yeast (or 2 teaspoons of dry yeast)

2. Prepare the mayonnaise: heat the milk and pour it into a bowl. Add the yeast, sugar and about 250 g of flour. Stir and leave the bowl in a warm place.

3. Melt the butter. Let it cool.

4. Mix the warm butter with the eggs, sugar, vanilla and salt. Pour the resulting mixture into the mayonnaise bowl and mix.

5. Gradually add the remaining flour and knead the dough. Get a homogeneous and dense dough. Let it grow in a warm place.

6. Prepare the filling: mix the cottage cheese (at room temperature) with the egg, raisins (drained water), caster sugar and vanilla sugar. If the cheese is too moist, you can add a little flour or semolina.

7. Divide the dough into 24 balls of the same size. Leave them at room temperature for 15 minutes.

8. Spread a ball of dough in a small tray and cut it into 3 parts (different sizes). Arrange a portion of the filling in the middle.

9. Glue the edges of the smallest part of the dough around the filling (as close to the base as possible). Then do the same with the other two parts of the countertop. Thus form the rose. Glue the edges of the dough well, especially the last "petal".

10. Do the same with the other portions of dough. Leave the buns at room temperature for 15-20 minutes.

11. Beat a yolk with a little milk. Grease the buns with the mixture obtained.

12. Arrange them on a baking sheet lined with paper. Bake the buns in the preheated oven at 180 ° C until they are ready.

Rose cheese with sweet cheese and raisins

We kept saying that we like cheese, or cheese pies, but these are wonderful Rose cheese with sweet cheese and raisins they were the best so far.
