2. Put the cheese through the large grater. Wash and chop the dill. If you use marinated mushrooms & cut them into smaller pieces. If you use fresh mushrooms & fry them in a hot pan with oil and onion.

3. Mix the mashed potatoes with the other ingredients (except mushrooms). Add the sifted flour and mix again. Get a thick dough.

4. With wet hands form some cakes from the dough obtained. Arrange a portion of mushrooms in the middle of each and glue the edges. Pass the roasts through the flour.

Ingredients Fasting meatballs made of mushrooms and eggplants

composition for meatballs:

  • 500 grams of mushrooms (of which you prefer, I used a mixture of white and brown mushrooms)
  • 2 medium-small eggplants, about 275-300 grams / piece
  • 2 tablespoons oil
  • 1 small onion (100 grams)
  • 2-3 cloves of garlic
  • 1 small red pepper (optional)
  • 1 tablespoon flax seeds + 30 ml. of cold water
  • 150 grams of breadcrumbs
  • 1 tablespoon chopped thyme or other greens (which you like best)
  • salt and pepper to taste

finished and fried:

  • 50-60 grams of breadcrumbs
  • 300 ml. of sunflower oil or other vegetable oil with a neutral taste

Preparation Fasting meatballs from mushrooms and ripe eggplant

1. First of all, we will take care to prepare the "egg", ie the flax mucilage, which will perfectly bind our composition. We put in a bowl 1 tablespoon of flax seeds and cover them with 30-40 ml. of cold water. Leave aside for at least 30 minutes, soaking the flax seeds can be done overnight and their binding effect will be even more pronounced. Around the seeds, the water will turn into a kind of jelly that is an excellent egg substitute in vegan dishes. Of course, we will also use the seeds with this mucilage.

2. Bake the eggplant directly on the flame or on the grill, until the peel is charred and the core is very soft. I baked several eggplants, but only two I used for these fasting meatballs from mushrooms and eggplants, the rest were for a salad. Peel a squash, grate it and squeeze the juice. After draining the liquid and cooling, the eggplant is finely chopped, as for the eggplant salad.

3. Meanwhile, clean the mushrooms carefully, wiping with paper towels. Then blend or chop very finely.

4. Finely chop the onion, as well as the red pepper. Heat 2 tablespoons of oil in a frying pan over medium heat and add the onion and pepper. Sprinkle with salt and cook, stirring constantly, for 5-6 minutes.

5. After the onion has softened, add the chopped mushrooms. Bake every 10-15 minutes, stirring occasionally, so that the mushrooms lose as much water as possible.

6. Baked and drained eggplant juice, mushrooms hardened with onion and pepper, all the contents of the bowl with flax seeds, crushed garlic, salt and pepper, chopped greens you prefer and 150 grams of breadcrumbs mix well in a bowl .

7. With wet hands, form the meatballs in the composition. I got 28 pieces of meatballs with a diameter of about 5-6 cm.

Fry fasting meatballs from mushrooms and ripe eggplant

8. Heat the frying oil in a pan over medium-high heat. Until the oil is well heated, roll the meatballs in breadcrumbs.

9. When the oil is well heated, it should have a temperature of 170-180 ° C. In the absence of an instant reading thermometer, it is approximated by dropping a grain of composition into the pan. If the oil sizzles heavily around it, it's hot enough. Fry the meatballs in slices, without crowding them in the pan.

10. They only need to be fried to brown as desired. We keep in mind that everything in the composition is already cooked. As soon as they are brown enough, they turn to the other side and fry until they become brown and with a crispy crust. These fasting meatballs from mushrooms and eggplants can also be cooked in the oven, but you will never get such a crispy crust.

When browned, remove the meatballs on layers of absorbent paper to drain off excess oil.

They are consumed hot or cold and I recommend serving them with marinara tomato sauce, they are delicious! May it be useful to you!

Potato fasting meatballs - 2 recipes

Since meatballs are such a practical and versatile dish (they can be served with different dishes, they can be packaged), on our website you can find different fasting recipes, prepared from different ingredients and combinations.

Potato meatballs are the simplest. Legumes can also be added to make them more consistent and filling, such as chickpeas, lentils or boiled soybeans.

Potato meatballs - recipe

• 1 kg of potatoes
• 3 onions
• 4 cloves of garlic
• 1 bunch of parsley
• 1 teaspoon of thyme
• 1 teaspoon of paprika
• 1 ½ teaspoon of salt

Peel the potatoes and divide the quantity in half. Half of them put them on the grater with big holes, and the other half on the small grater. Then squeeze the juice and keep the raw juice in a glass jar (you can use it in other dishes).

Put the squeezed grated potatoes in a large bowl. Add the finely chopped and chopped onion, the cleaned and crushed garlic, the well-washed and finely chopped parsley, and the spices. Stir until smooth.

Wet your hands and form thin meatballs. Place them in a Teflon tray, or in a regular tray, pre-lined with baking paper.

Bake in a hot oven until hardened and browned slightly, turning on both sides.

After they cool, they will become thicker. These meatballs are served as such, or with different garnishes: salads, rice, sauces, tomato juice or homemade ketchup, etc.

Mashed potatoes and mushrooms - recipe

• 1 kg of potatoes
• 500 g of white mushrooms
• 2 suitable onions
• 7 cloves of garlic
• 2 bunches of green parsley
• 1 tablespoon of natural vegetables
• 1 teaspoon of salt
• 1 cup of water

Wash, peel and grate the potatoes (500 g on a large grater, and 500 g on a low grater). Squeeze them well and keep the juice.

Clean and wash the mushrooms, then boil them for a quarter of an hour with a cup of water. After 15 minutes, drain (do not throw water) and pass through the meat grinder, or mix in a food processor.

Mix the grated potatoes with the rest of the ingredients: chopped mushrooms, finely chopped onion, finely crushed garlic, finely chopped parsley, water in which they boiled the mushrooms and spices.

Shape small, thin meatballs between your palms. Bake them in the oven, on both sides, in a Teflon tray or lined with baking paper.

Another option would be to put the composition of the meatballs in a yena bowl or in a bread tray lined with breadcrumbs, and bake it in the hot oven at 180 degrees for about half an hour. This way you will get a very good job.

Potato meatballs with cheese

It looks awfully good !! :))
Although I don't really eat potatoes, I'll try these. But I don't fry them, I put them in the oven.
Thanks for the idea! (I know, you once told me I don't need to thank you, but what to do if I'm well educated.)))

:)) Being well educated too, I feel obliged now to answer you: with pleasure, Dana!
I also tried the meatballs in the oven and they look very good (the recipe is on the blog), but it seems that the potato meatballs go best fried. Or maybe it's hard for me to accept the idea that a healthier prepared meatball can be as tasty as a fried one: D

We haven't eaten good fries for several years. We haven't used salt since the beginning of this year. and we are still alive. :)) I have baked meatballs many times and they come out very good. I am sure that these, from potatoes, will be just as good! I've already boiled the potatoes, but I'm going to pick up my baby from school and only then do I get to work. :) I will write later what I think about them.

I did, I ate. Delicious! But I also put garlic in them. a matter of taste. :) I forgot to specify that I made them in the oven, as I said. You can try too. ) I'm used to fried foods. Made in the oven, so there was nothing wrong.

Dana, salt also has its role in the body. in moderation of course, NaCl brings many benefits.

Yes, she has, I admit this, but after you have had a heart attack (my husband) for a while it does not harm her absence in any way. Or, if it hurts, you choose the least evil. than to have another heart attack and maybe not wake up. The absence of salt in the body causes digestive disorders, disorders of the nervous system and muscle pain. Its presence (usually in larger quantities than necessary) causes many more diseases and disorders in the body. So, if you let me make a joke, it's better without salt. ) However, many of the foods we use have from mother nature salt in them, so we use a certain amount of salt even without wanting to. Thank you for stopping to give me this advice, which is admirable in a world where people die next to us on the street and we pass indifferently.

I didn't put garlic in the potato meatballs not because I wouldn't think it didn't work, but more because I try to avoid all the meatballs I prepare looking too much alike. That is, I put garlic only in meat meatballs, dill only in pumpkin meatballs and parsley only in potato meatballs. No sense in telling you now - I don't wanna ruin the suprise.

& quot..I put garlic only in meat meatballs, dill only in pumpkin meatballs and parsley only in potato meatballs .. & quot
even so do I! hmm! I didn't think I would find something like this on this blog (as if I were thinking out loud)

:) Adina, I try to anticipate your thoughts, so that you can find on my blog only recipes to your taste and thus make you forget about the other culinary blogs. : D

..To be honest, I really found only recipes to my taste! Congratulations for this blog, I think you will visit it as often as possible, as Mrs. Adina says below. pt. inspiration but also because I find simple and not too expensive recipes, as well as more sophisticated recipes. hi, hi. and for us with experience and for. beginner! Anyway, I will recommend it further and I will continue to try other recipes. right now I set my eyes on & quotamandineeee & quot .. I come back with impressions !!

The ideal for tonight. I can't wait to try it.
Thanks to my networking and ideas provider!

You have nothing to do, Adina. Thank you for implementing my ideas and I hope to remain your recipe provider)

IT'S A GOOD IDEA BUT I WILL REPLACE ONIONS WITH MUSHROOMS AND I WILL NOT PUT GREEN.

Without the greens, the potato meatballs will suffer at least in the image chapter, my advice is to put a little greenery.
I find your idea with mushrooms interesting, but you have to be careful with the water they will eliminate during frying (you could counteract it by adding more flour). I think I would harden the mushrooms a little before putting them in the composition of the buns.

unfortunately my daughter does not eat any greenery. and I harden the mushrooms and then take them out on the napkin to leave their oil.

Robert, you only do good things. I love the potato / cheese combination and I don't even need bread anymore, because we have enough carbohydrates: d. I will rummage intensely around you and after a bite of potatoes and if there are potatoes left, we put some meatballs.

I see that you have found the potato mousse - it is also a search box on the blog that can be used to immediately find the desired recipe.
I also eat these potato meatballs without bread, but the bad part is that it ends immediately.

I made them tonight too, very good.

You are the first to try them :) I'm glad you liked them, maybe your comment will encourage others to try them.

looks great I will definitely do too

I hope you find them as great as they look)

About how many meatballs come out of the quantities you put? I'm going to try them today: D

Ignore, please, now I saw the last row :))

:) Victor, I hope that the second time you read the recipe more carefully, because I also mentioned that we should make meatballs from the composition about the size of a walnut. Otherwise they will not come out 32.

The potatoes are boiling :)
Recommend me a sauce that would go with these goodies!

I would make one S.O.S of garlic with sour cream, I also left you the link to that recipe.

ohh, my potatoes are on fire now too, I'm going down to the store to get cheese. I finished the donuts that came out supeeeer and gave them to all the neighbors on my floor. now he's waiting for me with meatballs. Mr. Robert, how much work do you give me? anyway the recipes are gorgeous and I kiss you for each one :))

:)) You kiss me for recipes, the neighbors kiss you for meatballs and donuts. What's more, love is in the air: D Don't get tired of preparing so many recipes, because you have a little energy left and to kiss me: D

if you want a simple and quick sauce, take a box of mushrooms, put the mushrooms, cook them when they are hardened, add broth or tomatoes to the broth according to your preference and the sauce is ready

I recommended my fastest version of the sauce. I mean without involving the stove, thinking that I was tired of it after so much fried meatballs :)

:)) I do what I do and I upset you. here I think it's full of tastes, I don't like sour cream sauces and I thought they were meatballs and they go with red sauce. scz if I bothered. DANIEL

Daniela, if you didn't tell me, I didn't even know you commented :) Don't apologize anymore, you don't bother anyone. on the contrary, we have to thank you for the suggestion) The tastes are not discussed and I did not suggest in any way that one sauce would go with the potato meatballs and another would not. I had already seen your comment and I said to give another alternative - anyway I only have about 3-4 on the blog :)

I have finished them. however, I never understood a thing. why when you make meatballs (whatever they are) until you finish making them, half of them are eaten? :))))

Luana, this is one of the questions I am still looking for the answer :)))

So are the pancakes. all the breath in the house has its way through the kitchen when you fry the meatballs. pancakes. and in the end you wake up that more than half have disappeared (if you're lucky)

:) And they can't be fried in great secrecy, the smell of meatballs and pancakes spreads immediately throughout the house.

Alas, I did not tell you. I made double pottery meatballs compared to your recipe. .I'm capped while I was frying today, donuts or meatballs. dumpling soup tomorrow. Be very careful that New Year's Eve is coming and I am waiting for interesting recipes. I'll let you know in advance so you don't say you didn't know :)))
aahh, I forgot, kiss you and my neighbors so keep well :))

I just saw the comment on the soup, so it is clear that you are committed to great deeds :) Instead of commenting here, I should start cooking. the holidays are approaching and the stock of recipes needs to be refreshed :)

I have an aunt who makes meatballs like this, I only ate at her, I think I'll try to do it too, they seem pretty simple to make from what I see

Hello
Your blog is nominated in this list.
http://cristi.mirea.eu/2012/11/care-este-cel-mai-bun-blog-din-constanta-in-2012/

Hello, Cristi! Thanks for the info, I discovered a lot of blogs there - I didn't expect there to be so many blogs from Constanta :)

It looks great but could I fry it in butter?

You can also fry the meatballs in butter, if that's what you want. But you will consume a lot of butter, I would not recommend you to do this.

Dear BarbatLaCratita, please think again when you approve the frying in butter, it would be a shame to spoil the beautiful impression you have made on me so far.

At the risk of spoiling the beautiful impression made, I can't disapprove of frying in butter. Because I believe that everyone can eat as they like and as their body allows. I do not preach unhealthy eating habits, but I do not infer them either. This should rather be done by a nutritionist, ie someone who is supposed to have thorough knowledge in the field. That's why there may be good comments like the one you left, someone has to sound the alarm and talk about cholesterol, E's and other dangers that "spread" us from the tasty food (I hope!) That I strive to I teach my readers to prepare it :)

They came out very well but another egg was needed otherwise they would crumble.

Mine remained whole with only two eggs, but thank you for the advice, it's good to know that another egg will surely bind the meatballs (who knows, maybe someone will have problems like this).

With the recipes you post, I'm starting to want a man like you. in the pan :)) Tomorrow I'll make the meatballs, now it's almost 12 at night anyway :))

:)) And what do you do if at some point this man gets bored of the pan and finds another hobby? Then you start wanting a divorce? : P

Why not? :))) But he doesn't care: D maybe he finds a hobby in cleaning and then I keep it :))

Hi, can you tell me, please, if these meatballs are good and cold, considering that they contain boiled potatoes and then they are fried? Nicole

Yes, potato meatballs are very good and cold. After they cool, it seems to me that they are much better than meatballs.

done, eaten..very good! they are made quickly and easily :) .. it's the first recipe I make from this site, and it's definitely just the beginning :)! let's have a good appetite! Diana

:) Welcome to the site, Diana! I'm glad you started right.

I also tried the recipe today and they turned out quite good, I was wrong at first because I made them too big and they didn't fry in the middle: D
I think it would go well with a clove of garlic: D

I think we share the blame for this mistake - I think maybe I should have explained the reason why I wrote that we have to shape the meatballs in the composition the size of a walnut, maybe that would not have occurred to you to make them bigger: ) I'm just trying not to lengthen the recipes too much, I'm bored with the world.
I definitely go with garlic! : D

Good evening! For about a week I discovered your blog, on a quiet day at work, and since then I go in every day to see recipes and comments. I already started with the recipe: carrot salad with yogurt, it turned out great, but I boiled the carrots, I didn't harden them in oil, I saw that someone else had left this comment. Tonight I want to make potato meatballs with cheese, I've already put the potatoes to boil, but I'll put them in the oven, I won't be frying at 10 in the evening. I'm a beginner in the kitchen but I discovered that I like it and it relaxes me. I have a lot to recover, but I will start with easier recipes. I also saw the vanilla ice cream recipe, I have to make it because vanilla is also my favorite. I have visited other blogs but I stay with another one, I liked your way of explaining and how to respond to comments, I often smiled reading the comments left by those and those who tried your recipes! I'll be back to tell you how the meatballs came out! Cami

Hi! It seems that I saw your second message first :) It's flattering to read that the blog is your favorite and that makes me want to write an answer that will make you feel at home just as well - but I can't find anything to match, I think I'm up for inspiration: D
I like this idea of frying, especially when it comes to hardened vegetables, but sometimes I also make meatballs in the oven. RECIPE it's here, if you're curious to try some sesame meatballs.
