Although it is prepared very simply and from the most accessible ingredients, they are obtained especially appetizing, aromatic and delicious. Served with creamy and slightly spicy sauce, they will turn an everyday dinner into a real celebration.


-300-400 g mashed potatoes

-2-3 tablespoons chopped dill

-100-200 g of mushroom mushrooms (fresh or marinated)


-150-200 g of cream or mayonnaise


1. Boil the potatoes. Drain them and prepare a puree. Add the butter and mix. Allow to cool.

2. Put the cheese through the large grater. Wash and chop the dill. If you use marinated mushrooms & cut them into smaller pieces. If you use fresh mushrooms & fry them in a hot pan with oil and onion.

3. Mix the mashed potatoes with the other ingredients (except mushrooms). Add the sifted flour and mix again. Get a thick dough.

4. With wet hands form some cakes from the dough obtained. Arrange a portion of mushrooms in the middle of each and glue the edges. Pass the roasts through the flour.

5. Fry them in a pan with hot oil on both sides. Cover them with a lid.

6. Prepare the sauce: pass the cucumber through the large grater, then drain the juice. Squeeze the garlic and chop the dill.

7. Mix the grated cucumber with the garlic, dill and cream (or mayonnaise). Match with salt to taste.

composition for meatballs:

  • 500 grams of mushrooms (of which you prefer, I used a mixture of white and brown mushrooms)
  • 2 medium-small eggplants, about 275-300 grams / piece
  • 2 tablespoons oil
  • 1 small onion (100 grams)
  • 2-3 cloves of garlic
  • 1 small red pepper (optional)
  • 1 tablespoon flax seeds + 30 ml. of cold water
  • 150 grams of breadcrumbs
  • 1 tablespoon chopped thyme or other greens (which you like best)
  • salt and pepper to taste

finished and fried:

  • 50-60 grams of breadcrumbs
  • 300 ml. of sunflower oil or other vegetable oil with a neutral taste

Preparation Fasting meatballs from mushrooms and ripe eggplant

1. First of all, we will take care to prepare the "egg", ie the flax mucilage, which will perfectly bind our composition. We put in a bowl 1 tablespoon of flax seeds and cover them with 30-40 ml. of cold water. Leave aside for at least 30 minutes, soaking the flax seeds can be done overnight and their binding effect will be even more pronounced. Around the seeds, the water will turn into a kind of jelly that is an excellent egg substitute in vegan dishes. Of course, we will also use the seeds with this mucilage.

2. Bake the eggplant directly on the flame or on the grill, until the peel is charred and the core is very soft. I baked several eggplants, but only two I used for these fasting meatballs from mushrooms and eggplants, the rest were for a salad. Peel a squash, grate it and squeeze the juice. After draining the liquid and cooling, the eggplant is finely chopped, as for the eggplant salad.

3. Meanwhile, clean the mushrooms carefully, wiping with paper towels. Then blend or chop very finely.

4. Finely chop the onion, as well as the red pepper. Heat 2 tablespoons of oil in a frying pan over medium heat and add the onion and pepper. Sprinkle with salt and cook, stirring constantly, for 5-6 minutes.

5. After the onion has softened, add the chopped mushrooms. Bake every 10-15 minutes, stirring occasionally, so that the mushrooms lose as much water as possible.

6. Baked and drained eggplant juice, mushrooms hardened with onion and pepper, all the contents of the bowl with flax seeds, crushed garlic, salt and pepper, chopped greens you prefer and 150 grams of breadcrumbs mix well in a bowl .

7. With wet hands, form the meatballs in the composition. I got 28 pieces of meatballs with a diameter of about 5-6 cm.

8. Heat the frying oil in a pan over medium-high heat. Until the oil is well heated, roll the meatballs in breadcrumbs.

9. When the oil is well heated, it should have a temperature of 170-180 ° C. In the absence of an instant reading thermometer, it is approximated by dropping a grain of composition into the pan. If the oil sizzles heavily around it, it's hot enough. Fry the meatballs in slices, without crowding them in the pan.

10. They only need to be fried to brown as desired. We keep in mind that everything in the composition is already cooked. As soon as they are brown enough, they turn to the other side and fry until they become brown and with a crispy crust. These fasting meatballs from mushrooms and eggplants can also be cooked in the oven, but you will never get such a crispy crust.

When browned, remove the meatballs on layers of absorbent paper to drain off excess oil.

They are consumed hot or cold and I recommend serving them with marinara tomato sauce, they are delicious! May it be useful to you!

Potato fasting meatballs - 2 recipes

Since meatballs are such a practical and versatile dish (they can be served with different dishes, they can be packaged), on our website you can find different fasting recipes, prepared from different ingredients and combinations.

Potato meatballs are the simplest. Legumes can also be added to make them more consistent and filling, such as chickpeas, lentils or boiled soybeans.

Potato meatballs - recipe

• 1 kg of potatoes
• 3 onions
• 4 cloves of garlic
• 1 bunch of parsley
• 1 teaspoon of thyme
• 1 teaspoon of paprika
• 1 ½ teaspoon of salt

Peel the potatoes and divide the quantity in half. Half of them put them on the grater with big holes, and the other half on the small grater. Then squeeze the juice and keep the raw juice in a glass jar (you can use it in other dishes).

Put the squeezed grated potatoes in a large bowl. Add the finely chopped and chopped onion, the cleaned and crushed garlic, the well-washed and finely chopped parsley, and the spices. Stir until smooth.

Wet your hands and form thin meatballs. Place them in a Teflon tray, or in a regular tray, pre-lined with baking paper.

Bake in a hot oven until hardened and browned slightly, turning on both sides.

After they cool, they will become thicker. These meatballs are served as such, or with different garnishes: salads, rice, sauces, tomato juice or homemade ketchup, etc.

Mashed potatoes and mushrooms - recipe

• 1 kg of potatoes
• 500 g of white mushrooms
• 2 suitable onions
• 7 cloves of garlic
• 2 bunches of green parsley
• 1 tablespoon of natural vegetables
• 1 teaspoon of salt
• 1 cup of water

Wash, peel and grate the potatoes (500 g on a large grater, and 500 g on a low grater). Squeeze them well and keep the juice.

Clean and wash the mushrooms, then boil them for a quarter of an hour with a cup of water. After 15 minutes, drain (do not throw water) and pass through the meat grinder, or mix in a food processor.

Mix the grated potatoes with the rest of the ingredients: chopped mushrooms, finely chopped onion, finely crushed garlic, finely chopped parsley, water in which they boiled the mushrooms and spices.

Shape small, thin meatballs between your palms. Bake them in the oven, on both sides, in a Teflon tray or lined with baking paper.

Another option would be to put the composition of the meatballs in a yena bowl or in a bread tray lined with breadcrumbs, and bake it in the hot oven at 180 degrees for about half an hour. This way you will get a very good job.
