Recipe Caper fritters from of 11-07-2019
The caper pancakes they are an original idea to bring a delicious aperitif or appetizer to your tables. You can prepare them as I did, with the basic recipe, or opt for one of the many possible variations: capers and anchovies, olives and capers, capers and potatoes, capers and tomatoes ... The only difficulty in preparing them will be to find the fresh capers, widespread especially in Sicily in the summer months, but if you don't find them or you have decided to prepare this recipe in another period, you can do as I do and use the salted ones, obviously making sure to rinse them very well, until you completely remove any salt residue. The taste will not be quite the same, but the result will be equally delicious!
How to make caper fritters
Start by preparing the batter: divide the yolks and whites and whip the latter until stiff peaks.
In another bowl, beat the egg yolks with the milk, then add salt and flour and mix.
Finally, add the egg whites, stirring gently so as not to dismantle the batter.
Desalt the capers completely and add them to the egg mixture.
If you have fresh capers, be sure to remove the stalk and rinse them under running water before adding them.
Start frying the pancakes by spoonfuls in hot oil, turning them over to brown them evenly.
As they are ready, drain the caper pancakes well and dry them with kitchen paper, then serve immediately.
